I never thought I would be a blogger but I'm glad I tried it out. It took sometime to get used to it and now I can't stop. This is about the day to day excitements of being a mom, wife, daughter, friend, or just a plain woman doing her thing.

English Muffin Pizzas

Break open the muffin to where the inside is placed up. Next place your Pizza Sauce on top of English Muffins. Sprinkle with cheese and top with your favorite toppings(2-3 pepperonis)
Going through some sites I never knew it was so popular. 

Bake 350 for 10 Mins. Easy and quick great for those busy nights, or when your drunk & need something in your stomach. :)

Scalloped Potato Casserole

1lb Ground Beef
1-1/1 cup grated cheese
Salt & Pepper
1 Can of Cream of Chicken
1/2 Onion, finely chopped
2 Large Thinly Sliced Potatoes
1 cup of milk
3 Quart Casserole Dish

1. Brown beef (not cook) & onion
Drain
2. Place Beef in Casserole Dish. Cover with Cheese, Salt & Pepper
3. Place Potatoes Over Meat & Cheese
(Now if your like me & for some stupid reason CANNOT for anything thinly slice a potato correctly & have them looking like wedges, it will not mess up the dish)
4. Mix 1 cup of milk & soup in bowl/pan & pour over top. (Might help to heat up a bit, but if in hurry you can mix off to the side of the stove.)

 5. THEN! Bake at 350 for 1 to 1-1/2 hours.
Pull out & serve!
Enjoy!

Okay as I promised here it is. Found this recipe online. Made a few changes, and if I may say it was AMAZING.


 Southwestern Beef Stew

1lb ground beef
1/2 teaspoon garlic powder OR 2 minced garlic cloves (I used powder)
1 Can Tomato Soup
1 Can (10 1/2oz--1 1/3 cup) Beef OR Chicken Broth
1 Cup Water
2 Tablespoons Chili Powder OR Tony's Creole Seasoning (I used Tony's)
3 Med. Potatoes (I used 2 Lg.)
1 Can Whole Kernel Corn
Shredded Chesse


Cook beef, & garlic over med-high heat. Drain. (I cooked it into a separate pan, since it wasn't deep enough & transferred it into a pot shown in the picture.
In the pot combine soup, broth, water, chili powder/Tony's, & potatoes. Add the cooked beef. Bring to boil. Then reduce to low, cover, & cook for 15 minutes. Stir in corn. 
Once done, put in bowl/plate, sprinkle cheese on top. Enjoy!

Simple Right?! It was so easy. It does have a kick to it. If it's too spicy for you, add a tiny bit of soy sauce to it. If you try this out, let me know what you think of it.

It's been a while since I've been on. Like I keep saying, I'm trying.
I came across another recipe the other day so I tried it out yesterday. It can also be used as a Freezer Meal, which isn't hard & I'll tell you.

Chicken & Rice

1 Box of Wild Rice w/ Seasoning Packet (didn't have any so used a Rice Side "Chicken & Broccoli")
1 Can Cream of Mushroom Soup
1 Can Cream of Chicken Soup
1 Can of Water (use one of the empty soup cans)
3-6 Skinless/Boneless Chicken Breasts (I used 3)

1. Mix together rice w/ seasonings, both soups, & water in a casserole dish. 
Mix well.  It will look like this.
Top with Chicken & season with salt & pepper if desired. 
Then bake for 1 hour @ 350 


Easy Right!!
 Family verdict, they loved it. Next time I may op. out the mushroom soup & do a double chicken soup. I wasn't a big fan of the mushrooms.

For Freezer Instructions:
Same instructions for Number 1. Pour into 8x8 freezer dish. Top with Chicken. Double wrap in foil, label, & freeze. 
Thaw & bake uncovered @ 350 for 1 hour.

Banana Pudding w/ Nilla Wafers

Okay so this isn't anything special basically straight off the box. I got 2 boxes, so doubled the milk, wafers, bananas, etc.




Mix the Pudding & set for 5 minutes.....

Slice up the bananas....I did about 3 bananas.......
Take the wafers and line them up like so.....I like to go over-board with the wafers
Add a layer of pudding....smoosh in the bananas & then layer in the rest of pudding, and then add more wafers if wanted/needed. The recipe box says to put in the fridge for an hour, but I'm setting it over night for Easter.

K, I don't have a name for this one but Crockpot 7lb Chicken...I know very nifty...lol.
Please Note That I Made This The Night, And Let It Sit In The Fridge Over Night.

The Ingredients:
*One 7lb Chicken ( I have a 10lb Crockpot so adjust to your size)
*Paprika
*Onion Powder
*Garlic Powder
*Poultry Seasoning
*Italian Seasoning
*Dried Tyhme
* Salt & Pepper
*7 Bouillon Cubes
* Water
* 1pkg. of green beans


Take your Chicken, clean it up & place it in the crockpot. Grab your Bouillon Cubes put them in a small pot & add water. We are going to boil the cubes in the water to make our own stock. As each person is different, only put as much water as you want.
Next take your Bouillon Stock (after cooled) and pour into Crockpot. Then take seasoning, and add desired seasoning, as each person is different. Once your ready to start cooking, stuff the bird with the green beans. If there are some left over don't worry, as long as you have stuffed it full.
Now your done. You can go ahead and start cooking now. But I'm waiting over night & start it in the morning. Low: 8 hours, High: 4-5 hours

Enjoy!!

I also used the left over shredded chicken, to make chicken noodle soup. Sorry no picture of that.

I borrowed this recipe from a blogger, but my first attempt didn't turn out so well. I don't like cottage cheese to I didn't use that, and it burned the sides, and the pasta was a little un-cooked. Maybe you might have better luck at it.

Crock Pot Lasanga 
Ingredients
  • 1 lb. of lean ground turkey(or beef)
  • 1 onion chopped
  • 1/8 tsp. garlic powder
  • 2 15 oz. cans tomato sauce
  • 1 6 oz. can tomato paste
  • 1 1/2 tsp. salt
  • 1 tsp. oregano
  • 1 12 oz. carton of fat-free cottage cheese
  • 1/2 C. grated parmesan cheese
  • 12 oz. lasagna noodles, uncooked
  • 12 oz. shredded non-fat mozzarella cheese

Directions

Brown ground turkey and onions in a skillet. Add garlic powder, tomato sauce, tomato paste, salt and oregano. Cook long enough to get it warm. In a bowl mix the cottage cheese, parmesan cheese and mozzarella cheese. Spoon a layer of meat sauce onto the bottom of the crockpot. Add a double layer of uncooked lasagna noodle (break to fit) and top with cheese mixture (you may have to use a knife to spread it). Repeat layers two more times. Cover and cook on low for 6-8 hours.

Fried Pickles On a Pan

1 Small Jar of Hamburger Slices of Pickles
2 eggs
3 teaspoons of flour or fry (depends how fluffy you want it)
Pepper
Seasoning (optional)
Veg. or corn oil

Start by getting your hamburger slices out and placing them on a paper towel and dry them.

Mix your eggs, flour or fry, pepper and optional seasoning. Get your oil nice and hot. Now take your pickles and dip them in the eggs mixture and place them in the pan. Brown both sides and enjoy.

I like dipping them in ranch. But you can choose your own dip.

Sweet & Spicy Honey Pork Chops


3 Pork Chops (bone optional)
Tony's Chachere's Creole Seasoning
Honey
Pastry Brush

Time: 30 Minutes

Start of by heating the pan to med-high heat. Now if you like trimming fat your pork chops do this now, that way your pan is nice and hot when you place them on. Once you have trimmed your chops, place them on the pan, and let that side cook for 5 minutes.
FLIP, now your gonna take your honey and pastry brush and coat the top and sides of the pork. Let that now sit for 5 minutes, FLIP and repeat.
Now it's time for the seasoning. Take your pork and FLIP it one more time, we want each side to be cooked evenly.
Take your seasoning and sprinkle it on and let it set for a couple seconds and then take your brush and brush in the left over seasoning.
After 5 minutes FLIP and repeat.

Don't worry about the juices we are going to use that. Alrighty, once you have flipped the pork after the first seasoning, you should see it starting to take color. This is good. Now you can choose to continue to put honey and seasoning on both sides until it's done.Once it is done and you take the pork off the pan, take the juices and pour on top.

Serve with Corn and/or Rice. Enjoy!!

Crunchy Green Bean Meatloaf


2 lbs ground beef
1-1/2 cup crushed french fried onions
3-4 eggs (depending on the meat)
1 can of green beans (you can sub. for fresh)
1/2 cups diced onion
salt & pepper to taste

Mix everything but beans in a bowl, then flatten out on foil, oven safe pan. Shape in a rectangle, about 2 inches thick. Lay green beans on top of meat mix, and start rolling.

Bake 1 hour at 350 and set for 20 minutes

Slice up and add teaspoon of salsa on top and serve
